Banana Bisque is a delightful dish that makes a great appetizer, soup entree, or even dessert. It is sensational tasting, and very easy to make! This banana bisque is a great way to eat something healthy for dessert. It reminds me of a pudding or banana cream pie and it reminds me of being in the tropics. The crunchy cinnamon croutons add a fun texture and are really good after soaking in the Banana bisque for a bit. This is a simple recipe that everyone in your family will enjoy.
Bananas are one of nature’s perfect foods. They are low in saturated fat, cholesterol, and sodium. Bananas are also a good source of fiber, potassium, and manganese.
- 3 cups bananas, ripe, peeled and sliced (about 4 bananas)
- 3 cups half & half cream or light cream
- 1/4 teaspoon ground cinnamon
- 1 loaf French Bread, two day old
- 6 tablespoons butter, melted

Prepare Cinnamon Croutons (see recipe below); set aside and let cool.

In a food processor or blender, place sliced bananas and cream; process until smooth. Add the cinnamon and the blend the mixture again.

Refrigerate the soup until well chilled.

Serve in small glass bowl with Cinnamon Croutons.

Preheat oven to 400 degrees F.

Remove crusts from the loaf of bread and cut into 1/2-inch thick slices. Cut the slices into small cubes. Brush the cubes of bread with melted butter and bake them on a baking sheet until they are golden, approximately 10 minutes.

Remove from oven.

While the croutons are still hot, sprinkle them lightly with the ground cinnamon. Let croutons cool completely before using in the bisque.
