Question:

I am from Alberta, Canada and had a very great opportunity to visit Australia this past March.  Beautiful country and very friendly, caring people in this country.

As I was there and staying at some friends house during our stay, I got a few recipes from the lady I was staying with but one calls for raising flour.  I am not to sure what we call that here but have asked two grocers about this flour and they do not know what I am looking for, but I was going to make a damper one day since being home but until I know what flour to use I do not want to attempt it. So if you can please advise me on this situation I would greatly appreciate your help. - Kate from Canada (5/29/02)


Answer: 

Raising Flour or Self-rising flour is an all-purpose flour to which baking powder has been. About 1 1/4 teaspoons of baking powder and a pinch of salt have been added during milling for every cup of flour. It is especially suited for biscuits, muffins, cakes, and pastries. It is also available bleached or unbleached.
