Cucumber-Caviar Salad

3 large cucumbers, each about 8-inches long
1 tablespoon freshly squeezed lemon juice
1/4 cup diced red onion
1/4 cup finely crumbled bleu cheese
1 cup sour cream
3 ounces caviar

Peel cucumbers. Using a very sharp knife, cut cucumbers in half lengthwise. Scoop out seeds, leaving a trough down the center of each half. Slice across into very thin pieces that will be shaped like crescent. Place sliced cucumbers into large bowl and toss with lemon juice.

In a small bowl, mix together the red onion, bleu cheese, and sour cream. Pour over the cucumber slices; toss to cover each slice. Cover and refrigerate up to 24 hours before serving.

To serve, place cucumbers onto individual serving plates or a in large serving bowl. Sprinkle caviar over the top.

Makes 4 to 6 servings.
