Cucumber Caviar Salad Recipe
Recipe Type:

Yields: serves many
Prep time: 30 min
Ingredients:
3 large cucumbers, each about 8-inches long
1 tablespoon freshly-squeezed
lemon juice
1/4 cup diced red
onion
1/4 cup finely-crumbled bleu (blue) cheese
1 cup sour cream
3 ounces
caviar
Preparation:
Peel cucumbers.
Using a very sharp knife, cut cucumbers in half lengthwise. Scoop out seeds,
leaving a trough down the center of each half. Slice across into very thin
pieces that will be shaped like crescent. Place sliced cucumbers into large bowl
and toss with lemon juice.
In a small bowl,
mix together the red onion, blue cheese, and sour cream. Pour over the cucumber
slices; toss to cover each slice. Cover and refrigerate up to 24 hours before
serving.
To serve, place
cucumbers onto individual serving plates or a in large serving bowl. Sprinkle
caviar over the top.
Makes 4 to 6
servings.
