The maple syrup lends a wonderful subtle sweetness and a hint of maple flavoring that not only goes great on your salad but makes a great marinade for meat, or flavor enhancer for rice dishes. It is very easy-to-make and so much fresher tasting than store bought dressings. You should give this recipe a try and see how delicious it is.
3/4 cup genuine Vermont Maple Syrup* 1 teaspoon salt 1/2 cup rice vinegar 1 cup extra-virgin olive oil 1 1/2 teaspoons ground mustard * This Maple Salad Dressing requires that you use a top-quality grade of maple syrup. If you use an inferior grade, you will end up with a thin dressing that does not cling to your greens. Look for a bottle of maple syrup that lists pure maple syrup as its only ingredient.
The shelf-life for maple syrup in a unopened sealed container is over one year. The shelf-life for maple syrup after initial opening is about six months in the refrigerator.
In a blender or food processor, combine maple syrup, salt, rice vinegar, olive oil, and ground mustard. Whirl 1 minute or until well mixed.
