Raspberry Brownie Delight is a unique way to use those chocolate brownies for dessert. The addition of fresh raspberries makes an easy to make dessert that pleases everyone you serve it to. Raspberry Brownie Delight is absolutely the best dessert for summer, plus you can make the brownie mixture ahead of time.

- 1 (20-ounce) package fudge-brownie mix
- 4 cups vanilla ice cream, softened
- 1/2 cup chocolate wafer crumbs (about 10 cookies)
- 2 cups fresh raspberries
- 1/4 cup granulated sugar

Preheat oven to 350 degrees F. Spray a 13- x9 -inch baking pan with vegetable-oil cooking spray.

Prepare brownie mix according to package directions. Pour brownie mixture into the prepared pan and bake 20 minutes. Remove from oven and cool completely on a wire rack.

Spread softened ice cream evenly over cooled brownies; sprinkle wafer cookies over the top. Cover and freeze at least 5 hours or overnight.

In a medium bowl, combine raspberries and sugar; set aside until ready to serve.

To serve, cut brownies into large bars.

Top each bar with 2 tablespoons raspberries.
