Marinated Mozzarella with Oregano and Capers is another excellent recipe to serve at a wine tasting with your family and friends. I always come home with an empty container when I bring this dish to a party. This tasty might be the easiest appetizer you have ever whipped up, and will definitely impress your friends. This is a recipe that can easily be prepared ahead of time. I highly recommend this appetizer as it is easy to prepare and so delicious.
- 12 ounces fresh mozzarella cheese, drained*
- 6 tablespoons olive oil, extra-virgin
- 2 garlic cloves, minced
- 1/4 teaspoon red pepper, dried and crushed
- 1 tablespoon fresh oregano, minced
- 1/4 teaspoon coarse salt or sea salt
- 1/4 teaspoon black pepper, freshly ground
- 1 tablespoon capers, chopped

Slice the mozzarella cheese into 1/4-inch thick slices. Overlap mozzarella cheese slices on a platter.

In a small frying pan over medium heat, add 2 tablespoons olive oil and heat. Add garlic and crushed red pepper; stir just until garlic begins to color, approximately 2 minutes. Remove from heat.

Off the heat, stir in oregano, salt, and pepper; let cool.

Stir in capers and remaining 4 tablespoons olive oil. Spoon over the mozzarella cheese slices.

Serve with artichoke hearts, olive, and sliced salami on the side.
