Questions and Answers – How to re-dehydrate sun-dried tomatoes
Question:
I have looked all over for this information. I bought dehydrated sun-dried tomatoes. I am making a recipe tonight that calls for re-hydrated sun-dried tomatoes.
How do I re-dehydrate them? Just water? How long? Should I put in some Olive oil to soften them up? Any ideas you could provide me would be greatly appreciated.

Answer:
Dehydrated tomatoes can be used “as-is” or re-dehydrated. They may be used whole (halves), or minced into bits, sliced into slivers, chopped into chunks, or pureed into pulp.
Dried tomatoes may be re-dehydrated in a variety of ways. Tomatoes may be added directly to soups and stews, or may be soaked in water, wine, bouillon or vegetable juice to cover. They usually re-dehydrate within 1 to 2 hours. If they are soaked for more than 2 hours, or overnight, they should be refrigerated. Using boiling liquid speeds up the soaking time. The soaking liquid may be used in cooking.
