Cucumber Mint Tea Sandwich Recipe

This Cucumber Mint Tea Sandwich is a new variation on a traditional cucumber tea sandwich!  So easy-to-make and so delicious!  Anyone who loves cucumber sandwiches will really enjoy these sandwiches.  The fresh mint provides a cooling flavor, making it an ideal choice for summertime afternoon tea parties or for picnics.  Wouldn’t this sandwich taste great with some homemade sweet tea or lemonade?

Did you know that some American scientists say that the best thing to eat to regulate body temperature and stave off dehydration during a heatwave are some cucumber sandwiches.  Cucumbers are in the same family as other squashes and they have a high water content, which keeps them cool and moist inside.  This may be one of the reasons they are such a summertime favorite — and may be where the phrase “cool as a cucumber” comes from.

Cucumber Mint Tea Sandwich Recipe:

Servings: 8 whole sandwiches
  • 1/2 English cucumber, peeled and very thinly sliced (about 32 slices)*
  • 1/4 cup mint leaves, rinsed, spun dry, and chopped fine
  • 1/4 cup unsalted butter, room temperature
  • 1/4 cup cream cheese, room temperature
  • 16 slices white bread (best-quality)**
  • Salt to taste
  1. Place cucumber slices between layers of paper towels to remove excess moisture.

  2. In a small bowl, combine chopped mint leaves, butter, and cream cheese; spread on one side of each 16 slices of bread.

  3. Lay cucumber slices onto the buttered side of 8 slices of bread.  Sprinkle with salt.  Top with the remaining 8 slices of bread, buttered side down.

  4. Carefully cut the crusts from each sandwich with a long, sharp knife.  Cut the sandwiches in half diagonally and then cut in half again.  Decorative shapes can be made with cookie cutters.

  5. Yields 8 whole sandwiches or 16 halves or 32 fourths.

  6. Making Tea Sandwiches Ahead of Time:

  7. If you need to make tea sandwiches in advance and need to keep them from drying out, cover them loosely with a sheet of wax paper and then place a damp kitchen towel over the wax paper (never place a damp towel directly on top of the bread because the sandwiches will become soggy). Refrigerate.

  8. When ready to serve, remove from refrigerator.  Uncover sandwiches just before serving.

Recipe Notes

Cucumber Mint Tea Sandwich*  Slice the cucumber into slices as thin as you can make them.

** Choose the best-quality white or wheat bread as possible.  Never serve end slices.  Freezing the bread before cutting and then spreading makes for easier handling.
