Seared Madeira Tuna Recipe

Seared Madeira Tuna Recipe is a great tuna steak recipe that is so easy to make and explodes with flavor!  This Seared Madeira Tuna recipe does require a little planning on your part because the tuna should marinate at lease three hours before you cook it.  Due to the tradition of fishing on the island, fish are important in the daily diet of the locals.  Tuna is especially important on the island and is usually grilled “Madeira style” over a wood fire.

Madeira wine is a fortified Portuguese wine made on the Madeira Island that is available in a range of dry to sweet styles.  The Rainwater Madeira is a three-year old fruity blend that is inexpensive and excellent used for cooking.  This Madeira wine would be great used in making this Seared Madeira Tuna Recipe.  You will love the use of the Madeira Wine with the tuna steaks.

  1. Rinse the tuna steaks and pat dry with paper towels.  In the refrigerator, marinate the tuna steaks in the orange juice for at least 3 hours, but overnight is better.

  2. In a small bowl, combine celery salt, onion salt, white pepper, flour, and salt.  Remove the tuna steaks from the orange juice; dust with flour mixture.

  3. Using a heavy bottomed saute pan or a cast-iron pan, warm the olive oil.  Increase the heat to high and place the tuna in the pan.  Sear for 1 minute, then turn over carefully, reducing the heat to medium.  Sear the other side for 1 more minute until medium rare.  (Do not overcook the tuna or the meat will become dryand lose its flavor.)  Remove tuna steaks from pan and keep warm.  

  4. Reduce heat to medium-low.  Add soy sauce, Madiera, cream and horseradish; stir until heated thoroughly.  Remove from heat and pour sauce over tuna steaks.

  5. Serve immediately.

  6. Makes 4 servings.
