Seared Tuna with Gingered Plum Ragout Recipe

 

Seared Tuna with Gingered Plum Ragout is the creation of Chef Paul Warner, Executive Chef at The Oregon Zoo in Portland, Oregon.

Plum Ragout is basically seasoned stewed plums.  In fact, the term ragout comes from the French verb “ragouter” meaning to “revive the taste.”  Do not confuse ragout with ragu, which is an Italian word for tomato sauce.
