Roasted Tomatoes with Blue Cheese

- 4 medium-size tomatoes, peeled*
- 1 cup thick Blue Cheese Dressing
- 1/4 cup green onion, sliced
- 4 bacon slices, cooked crisp and crumbled
- 4 teaspoons parsley, freshly chopped

Preheat broiler of your oven.

With a sharp knife make 3 or 4 vertical cuts onto top of each peeled tomatoes, cutting about halfway through tomato.

Place tomatoes, cut side up, into an ungreased 8-inch square baking dish. Pour 1/4 inch of water into baking dish around the tomatoes; set aside.

In a small bowl, combine blue cheese salad dressing and green onions. Spoon a heaping tablespoon of the blue cheese mixture over the top of each tomato.

Place in oven and broil approximately 4 minutes or until bubbly and lightly browned.

Remove from oven and garnish with crumbled bacon and parsley.
