Zucchini Parmesan Supreme recipe is one of those dishes that I created at the last moment with what was in the garden. As you may have guessed, I have a lot of zucchini squash in my garden. Summer is the season of zucchini and you had better have your recipe book ready if you planted even just one plant. Zucchini seem to grow like weeds and one plant will keep you, your friends and your neighbors in the green! This Zucchini Parmesan Supreme recipe is definitely one to try and a sure a “keeper”, for zucchini season.

- 1 medium-size zucchini squash, sliced 1/8-inch thick
- 1 large tomato, peeled and sliced
- Salt and coarsely-ground pepper to taste
- 1/4 cup onion, chopped
- 3 cloves garlic, minced
- 1 cup Parmesan Cheese (Parmigiano-Reggiano), freshly-grated
- 1/2 teaspoon thyme, dried
- 1 large tomato, chopped
- 1/2 cup bread crumbs, seasoned

Preheat oven to 375 degrees F.

In a deep-sided baking dish, layer 1/2 of the sliced zucchini; place tomato slices over zucchini. Season with salt, pepper, onion, and garlic.

Then layer the remaining zucchini slices over the top. Spread grated Parmesan cheese over the top and sprinkle with thyme.

Spread chopped tomatoes onto top of cheese and sprinkle bread crumbs onto top of mixture.

Bake approximately 30 minutes or until zucchini is soft. Remove from oven and serve.
