Prosciutto De Parma Quesadillas Recipe

Prosciutto de Parma Quesadillas make a great lunch or dinner entree – plus these could be served as an appetizer.  A quesadilla is a tortilla, usually a corn tortilla but also sometimes made with a flour tortilla – a tortilla folded over a filling.  “Queso” is cheese in Spanish.  Quesadillas originated in central Mexico and the southwest United States.  Karen likes to serve these quesadillas with her Orca Bean, Jalapeno Chile, and Yellow Rice Soup.

Prosciutto De Parma Quesadillas Recipe:

Ingredients
  • 2 Flour Tortillas or wraps
  • 1/4 cup Smoked Jack Cheese, grated
  • 1/4 cup Gruyere Cheese, grated
  • 2 slices Prosciutto de Parma*
Instructions
  1. Distribute the grated cheeses over the top of one (1) flour tortilla.  Place the Prosciutto slices on top of the cheeses. Place the second flour tortilla shell on top.

  2. Coat a non-stick frying pan with non-stick spray or lightly brush with olive oil.  Place on the stove over medium-high heat and brown one side of the quesadilla; then flip and brown the other side until the cheeses are bubbling and tortilla is golden.

  3. Remove from pan and let sit approximately 1 minute for cheese to set up a little. 

  4. Cut with a large, sharp knife into four wedges.

  5. Place on individual serving plates and serve.

  6. Serves 2.

* An Italian salt-cured and transparent thinly-sliced ham.
