Lasagna Soup Recipe

My youngest daughter had been hearing about lasagna soup and decided to try it out on her family since she was looking for a new soup recipe to try. This turned out to be a very easy to make soup and the flavors reminded her of a cross between a nice Pasta e Fagioli Soup and lasagna flavors. What is not to like about lasagna ingredients? The whole family enjoyed the soup, especially topped with cheese!

Many recipes only use hamburger, but she decided to also incorporate Italian sausage for a more authentic lasagna flavor. Try this soup when you are looking for a simple and satisfying dinner during the cold weather months. Serve with some warm garlic bread and salad. In this recipe we have provided both stovetop and slow cooker instructions.

Ingredients
Lasagna Soup:
  • 1 pound lean ground beef (hamburger) or ground turkey
  • 1 pound Italian sausage, ground
  • 1 medium onion, chopped
  • 4 to 5 cloves garlic, minced
  • 1 (32-ounce) container beef stock or broth*
  • 2 (15-ounce) cans diced tomatoes, undrained
  • 1 (24-ounce) jar of marinara sauce or spaghetti sauce**
  • 2 tablespoons Italian seasoning
  • 1 teaspoon sugar (granulated)
  • 8 ounces lasagna noodles, broken up into 2-inch pieces***

Stove Top Method:
  1. In a large soup pot or Dutch oven over medium-high heat, add the ground beef and Italian sausage; cook until the meat is browned (drain off fat and discard). Add the onions and garlic and continue to sautuntil translucent.

  2. Stir in beef broth, diced tomatoes, spaghetti or marinara sauce, Italian seasoning and sugar. Bring just to a boil. Reduce heat to medium low, cover and simmer 30 minutes. Salt and pepper to taste.

  3. After 15 to 20 minutes of simmering, add the dried lasagna noodles and continue cooking until the noodles are al dente (soft with a slight bite).

  4. Serve soup in individual soup bowls and garnish with cheeses, fresh herbs, and enjoy!

  5. Serves many.
     

Slow Cooker (Crock Pot) Method:
  1. Preheat the Slow Cooker (Crock Pot).

  2. In a large skillet, over medium-high heat, add the ground beef and Italian sausage; cook until the meat is browned (drain off fat and discard). Add the onions and garlic and continue to sautuntil translucent.

  3. Transfer the beef mixture to your preheated Slow Cooker. Add the beef broth, diced tomatoes, spaghetti or marinara sauce, Italian seasoning and sugar. Stir all the ingredients together and then cover with the lid.

  4. Cook on high heat for 4 hours or on low heat for 8 hours.

  5. During the last 20 minutes of cooking (soup should be hot and bubbly), add the dried lasagna noodles and continue cooking until the noodles are al dente (soft with a slight bite).

  6. Serve soup in individual soup bowls and garnish with cheeses, fresh herbs, and enjoy!

** Can substitute 1 (15-ounce) can tomato sauce and 1 (12-ounce) can V8 tomato juice.

    Loved this recipe! I cook for 5 elderly families and one of my guys isn’t doing so well and he’s down to mainly soups. I made French bread and had intended on lasagna, but remembered it is hard for him to eat. So, I found this recipe and it’s SO good!

    As a garnishment, I mixed ricotta cheese, Parmesan cheese and Mozzarella cheese with some parsley. Creamed it up so they can scoop some on their soup!
