- 6 very ripe large tomatoes, peeled, seeded, and cut into bite-size chunks*
- 1/2 cup olive oil, extra-virgin
- 1 cup fresh basil leaves, cut into strips
- 1 cup Parmesan Cheese (Parmigiano-Reggiano), freshly grated
- 3/4 cup black olives, sliced
- 1/2 cup pimiento-stuffed green olives, sliced
- 4 cloves garlic, minced
- Salt to taste
- 1 teaspoon pepper, coarsely ground
- 1 (16-ounce) package linguine pasta, uncooked
- Parmesan Cheese (Parmigiano-Reggiano), freshly grated
