Celebrating Spring Dinner Menu
This Spring Dinner menu was complied to celebrated the wonderful vegetables that are in season and available from your garden, farmer’s markets, and local grocery stores during the Springtime. Spring always brings a fresh crop of seasonal vegetables. Seasonal vegetables always taste better when purchased and served during their growing season.
Grilled Garlic Artichokes
I love artichokes, so I was excited to discover a healthier way to flavor them without a mayonnaise-based dip or clarified butter. These artichokes are brushed with blend of olive oil, lemon juice, crushed garlic, salt and pepper. So simple and so much healthier.
2nd Course – Salad:
Pea and Radish Salad with Mint
This very refreshing Spring Pea and Radish Salad is a delicious salad using in-season vegetable.
3rd Course – Main Entree and Sides:
Once you’ve tried this Chicken Piccata dish, it will become your favorite poultry dish. Enjoy this restaurant dish at home with a glass of wine and a fresh salad. So easy to make, it is excellent for a dinner party to impress your guest. They will never even realize that it is low in calories!
Saffron Risotto or Risotto alla Milanese is a traditional Italian risotto with saffron in it. This recipe guarantees the creamiest, silkest, and most delicious risotto possible.
Roasted Asparagus Parmigiano
This is my favorite way to prepare and serve fresh Spring asparagus. It is so simple and so good! It smells like you have a pizza in your oven. My grade-school-age grandsons love this asparagus! They always ask me to make my asparagus for them. So, this is a kid friendly recipe!
4th Course – Dessert:
Lemon Tart – Chef’s Favorite Lemon Tart
The chef’s favorite lemon tart is a somewhat sophisticated take on Southern-style lemon chess pie. Serve this with a mixture of seasonal berries and lightly whipped cream.

Summer is the time for barbecues and picnics. The biggest party crasher at summer picnic and buffets is food borne bacteria. You can’t see them and you can’t taste them, but you sure can feel them if illness occurs hours or days later.
