There is a saying about lemons; “When life gives you lemons, make lemonade.”  Well maybe there should be one for bananas as well – when life gives you overripe bananas, make banana bread!   At least that is what I do.

This is my family’s recipe for Banana Nut Bread. I think it originally came from my mother, Dorothy Hagerman.  This is a moist, buttery banana bread loaded with banana flavor. It is very easy to make and so delicious!

Gluten-Free Banana Yogurt Bread
This Gluten-Free Banana Yogurt Bread is a very moist and delicious banana bread.  The use of yogurt in the recipe allows you to cut back on butter.  I have also cut back on the sugar by substituting some sweetener for 1/2 of the sugar.  A have some family and also some friends who are trying to cut back on the gluten in their diets.  They inspired me to develop this easy-to-make banana bread.  Give it a try – you will not be disappointed!

 

Blueberry Pecan Banana Bread
This is a family banana bread recipe that I modified reducing the amount of butter with a substitution of non-fat Greek yogurt.  I also added the fresh blueberries, Lemon zest, and cinnamon for an amazing flavor combination.  Whether you enjoy a slice as a snack or for breakfast, this Blueberry Pecan Banana Bread is so flavorful, you won’t need any butter.

 

Lemon Banana Zucchini Bread
I know this is a long title – but what do you do when you have several ripe bananas and zucchini squash in your kitchen?  You make bread!  This is a very moist and delicious banana bread.  The texture is more cake-like than other quick breads. My husband loved it!

 

Peanut Butter Chocolate Banana Bread
My youngest daughter loves to try different flavor combinations with banana bread.  In this version, she took our family Banana Bread recipe and substituted peanut butter for half of the butter requirement.  Peanut butter is a good butter substitute in baking to help lower the cholesterol.  The real reason she made the substitution – is because she loves peanut butter!  To top it off, chocolate chips also needed to be added.  What could be a better flavor combination than bananas, peanut butter, and chocolate?

 

Reeses Peanut Butter Chocolate Banana Bread
Here’s another variation on the Peanut Butter Chocolate Banana Bread with Reeses Pieces candy added in.  The Reeses Candy Pieces take the peanut butter flavor up another notch!  Peanut butter is a good butter substitute in baking to help lower the cholesterol.  The real reason she made the substitution – is because she loves peanut butter!  To top it off, chocolate chips also needed to be added.  What could be a better flavor combination than bananas, peanut butter, and chocolate?

 

Raspberry Chocolate Banana Bread

My doctor recently diagnosed me as a diabetic.  Because of this, I’m having to kick my sugar and gluten habit!  I have been experimenting with various low gluten flours and sugar substitutes in my baking.  I have been amazed at all the different types of flours available that are lower in gluten than regular flour.  I have also discovered Xylitol, a wonderful sugar substitute that doesn’t have an after-taste.

 

Ultimate Banana Bread
This recipe for banana bread fascinated me, as it takes 6 bananas in the recipe.  Also the bananas are heated, juiced, and the juice reduced!  I had never heard of this technique before, so I just had to give it a try.  I very slightly adapted a few instructions in the recipe.  It was good, but not my favorite banana bread.

Recipe is from Brennan’s Restaurant in New Orleans, Louisiana.  Little did anyone realize that Bananas Foster would become an international favorite and is the most requested item on the restaurant’s menu.  Thirty-five thousand pounds of bananas are flamed each year at Brennan’s in the preparation of its world-famous dessert.

This delightful Banana Bisque could be served either as an appetizer, soup entree, or even dessert.  It is not only sensational tasting, but so easy to make!

Fresh Fruit Salad
This is my favorite fresh fruit salad.  My mother-in-law, Gertrude Zemp, taught me to make this when I was a young bride.  It is very refreshing and also low in calories.I use whatever fresh fruit is in season when making this salad.  The banana dressing is very light and compliments the fruit.  You will never want to make a “yucky” canned fruit salad again!

This is very refreshing and delicious fruit salad. I use whatever fresh fruit is in season when making this salad.  The 1-2-3 Fruit Dressing is from an old Betty Crocker Cookbook.  The combination of citrus fruits in the dressing gives the salad a wonderful delicious flavor!
