Lamb is a symbol in many religions.  In Christianity, the bible references the lamb as the sacrificial animal and represents the son of God.  In the Jewish community lamb is the Passover sacrifice and lamb is also served for the Pope’s traditional Easter dinner.  Traditionally a whole lamb was roasted, but it is perfectly acceptable to serve parts instead.
