Last Minute Dinner – Salmon with Dill Mustard Sauce Menu
I had one-day notice for this dinner party. My husband had a client in town that he wanted to bring home for dinner. I was told that he loved seafood, so I went to my favorite seafood store to buy whatever was fresh and in season. This Last Minute Dinner Menu is the quickest and easiest way to throw together a delicious meal. And, best of all, your guests will not suspect a thing!
1st Course – Appetizer:
Grilled Oysters
Oysters can be cooked in their shells on your barbecue grill. The heat from the grill steams the oysters and pops the shells open, while poaching the oysters inside. They make a great appetizer. So easy and so delicious! My husband just loves these oysters.
2nd Course – Salad:
Spinach Salad with Mandarin Oranges
This is a refreshing and colorful salad that is so tasty!
3rd Course – Main Entree and Sides:
Salmon with Dill Mustard Sauce
Baked Salmon with Dill Mustard Sauce is so easy to make and so delicious! The wonderful Dill Mustard Sauce really compliments the salmon’s delicate flavor.
German Creamed Spinach
This dish is absolutely wonderful! It is a family favorite at our house. This is one of those recipe where I normally buy a large amount (and I mean large amount) of spinach, and then decide how much Cream Sauce we will need to make. Be flexible – once you make this recipe the first time, you will understand why I just do it and don’t usually follow a recipe. This can be made ahead of time and rewarmed when ready to serve.
Salt-Crusted Mini Potatoes
These potatoes are so easy to make! You will definitely make them over and over.
4th Course – Dessert:
Cherries Jubilee
This easy-to-make Cherries Jubilee recipe is a very simple but impressive dessert to serve your guests. Using Cherry Pie Filling makes this recipe so easy!

Golden Rules of Food Safety – IF IN DOUBT, THROW IT OUT! If you have any question in your mind about the freshness or safety of eating a food product, throw it out. It is better to be safe than sorry!
Picnic Safety Tips – There is nothing more American than the picnic. Picnics can take on many forms, such as the community picnic, friends and neighbors, tailgate parties, or ball games. There is also one sure thing at every picnic-lots of good food. The important point is to have safe and healthy food, not food that can cause food borne illness. Always prepare and store food properly.
Summer Safety Tips – Summer is the time for barbecues and picnics. The biggest party crasher at summer picnic and buffets is food borne bacteria. You can not see them and you can not taste them, but you sure can feel them if illness occurs hours or days later.
