In spring, lamb is one of my favorite foods.  I’m particularly fond of the boneless leg of lamb because it is so easy to cook and carve.  To many families, lamb is traditional to serve for Easter Dinner, but it makes a great meal for any occasions.  When cooked to medium rare, it is flavorful and mild so that anyone who enjoys roast beef will also enjoy it.

Irish lamb stew also typically cooks in a clear broth instead of a thicker consistency that most Americans are used to.  Now days you will also find more variety of root vegetables added to the stew such as carrots, leeks, parsnips or turnips with barley, and parsley.  My daughter also used some stout beer to deglaze the meat and onions bits stuck to the bottom of the pan for maximum flavor enhancement.

Moroccan Lamb Tagine with Sesame Prunes
This Moroccan Lamb Tagine with Sesame Prunes dish is a traditional Moroccan tagine recipe (the dish is named for the cookware) which typically includes a combination of braised meat (often lamb, beef or chicken), fruits, root vegetables, and fragrant spices like cinnamon, saffron, and ginger). This dish is often served at holiday gatherings, weddings, and other special occasions with Mahrash Moroccan Bread for scooping up the meat and sauce.

This beautiful slow-cooked lamb dish is very delicious with many layers of flavor.  It makes a beautiful presentation for your guests as well.  Although the recipe calls for Merlot wine, I used Zinfandel wine because that is what we were drinking that night with dinner.  Any full-bodied red wine would work well.  I also used Pomegranate molasses because it is what I had on hand.  I served this with the Potatoes Slow-Cooked in Beef Stock (see recipe below).
